The Yemista (literally stuffed), is a family meal, which can also be found in any good Greek taverna. In Greece, we find among these stuffed vegetables Tsakonian eggplant (long, thin and zebra). I recommend not using the Indian eggplant (form of large chicken egg), the shape would require you to cut it in half, stuffing will be dry, and uncooked ; rice steams inside the vegetables. The skin of the eggplant is much more bitter than Tsakonian one, it would ruin the taste of your meal. Feel free to add a little water during cooking and sprinkle your vegetables. This meal is served both hot, as ambient temperature.
